is it okay to use ade7757 with an 8-bit pic? how does it affect when ade7757 is 16-bit?

I suggest you to read carefully the ADE7757 datasheet. It can be found here

https://www.alldatasheet.com/datasheet-pdf/pdf/48637/AD/ADE7757.html

The datasheet says to measure power just measure frequency, and this can be done almost with any PIC microcontroller regardless it is 8bits or 32 bits.

Even the dataasheet of ADE7757 suggest how to measure power using a microcontroller, i.e. using a timer / counter to measure frequency.

Hope this helps.

it seems that my question is not clear. sorry about that. what i meant to say is that even though i use ade7757 which is 16-bit, is it okay to use an 8-bit microcontroller? im actually concern about the transfer of data..
