What exactly u need to contol in an AC motor? Wether it is the speed, you aim at frequency driven control, , current control, voltage control, or some thing else? This site may be helpful for you.

have you read some IEEE papers or just simply goole-it after FOC ? take a look at microchip website, motor control applications, they have some application notes and reference designs with well documented examples, both hardware and software. bassically there you have all what you need to buid an Frequency inverter, less the control and user interface part.
