I think that your question is too general.
For a vast application, most MCU can be used, from 8-bit core to 32-bit core.
For exemple, you can do a electronic doorlock using 8-bit MCU like 8051-core, PIC, etc.
Or you can create an simple PDA using 32-bit core like ARM7 or...
