Help me to explain this Mosfet setting

the gate isn't connected to +5 and -5V!

The input to the gate is the ac coupled signal via 100nF capacitor. The +/-5V DC you speak of are connected to resistors which form a voltage divider. I'm going to stop there as that should put you on the right track to answer the rest of your question with a bit of thinking.
