In terms of future industry growth/demand and job opportunities, what are the best areas of EE to specialize in for graduate school (semiconductor devices, power, signal processing, etc.)

A little tale :- A mate of mine was apprenticed as a glass blower, made nice jugs and vases. Moved to Philips and blew fancy glass envelopes for valves, learnt about valves. When semi conductors came along got involved with the glass envelopes for them. Learnt about them. When ICs came along got involved with designing ICs. Now retired.
So you never know, Go for what you feel happy with.
