The sensor can be only connected to FPGA directly if it has a digital, low voltage logic compatible output. Otherwise you need special interface. If the sensor has an analog output signal (I guess so), an ADC is usually needed.
Please tell about the involved sensor and its output signal.
#2 already mentions that the sensor o/p can be digital or analog and what needs to be done per case.
Have you already choose your sensor?
If not, then have a look at sensors with Pmod interface.

In my opinion it is easy to interface Pmod modules with FPGA development boards.
btw- You have mentioned Altera Ep3c5e1448n which I guess is the part number. If you want to use Pmods, please check if a Pmod interface also exists with the corresponding Altera dev board or not.

I want to know if anyone has done any project on flame automation system in FPGA. I am using digital sensors so i think it will work but I'm confused with the procedure in Quartus.
