I'm using 5x matched transistor pairs in a SOT-363 package.

That's 10x transistors in total - but my circuit only needs 9x transistors.

Do I need to 'tie down' the unused pins of the 1x unused transistor in the same way I would tie the unused pins of an op-amp?

If so - how/where would I do this?

Thanks.

it really doesnt matter if they dont share nodes, but they probably at least share a bulk (body), and so its good to make sure they are off, if nfets tie all nodes to AGND, if Pfets tie all to AVDD.
