The Only Simulator that satisfy Embedded Engineers could be Proteus .
check www.labcenter.com.you can get a Demo Software from this site.

check the attachment showing PIC18 simulated in proteus .

vijay has given a right sugession regarding proteus u can also think of hitchPIC simulator or proton
