What is the default temperature for Keysight ADS simulation?
Is there a way to change the temperature of a simulation environment? if there is then how should I change it?

Place the Options component available from most of the simulation component palettes or simulation library groups.

Using this you can set
Temp (Simulation temperature) - Sets the ambient temperature at which a simulation will be run. The default is 25 degrees Celsius. The predefined variable temp is set to this value.
Tnom (Model temperature) - Sets the default value for the nominal temperature of models. The default is 25 degrees Celsius. The predefined variable tnom is set to this value.

Do you know what the difference between simulation ambient temperature and nominal temperature of models?

Simulation temperature is the current ambient temperature for the circuit analysis. Model temperature is the temperature at which the model itself was extracted/defined. If the simulation temperature is the same as the model temperature, then normal results will be achieved. It the simulation temperature is not the same as the model temperature then the results will be scaled, Temp/Tnom, according to the model definition to adjust for that difference.
