I think that your question is too general.
For a vast application, most MCU can be used, from 8-bit core to 32-bit core.
For exemple, you can do a electronic doorlock using 8-bit MCU like 8051-core, PIC, etc.
Or you can create an simple PDA using 32-bit core like ARM7 or ARM9 (TMS470-ARM7 of TI)
We can not list all possible project based on MCU. It's so big that we do not have much time to gather in a list!
You can do various things with microcontrollers. For instance:
1. calculator with keypad and LCD;
2. Universal controller for some appliances;
3. Lighting effects;
4. Amperemeter, ohmmeter, voltmeter;
5. Logic analyser;
6. Characteristic reader of diodes, transistors with graphical display;
7. Waveform generator;
8. Frequency meter;
9. Digital oscilloscope with graphical LCD;
10. Digital power regulator.

I have made a board for building a digital temperature and humidity meter.
Writing on articles to explain all softwares and details, some of them is available for download under www.TechToys.com.hk.
Tomorrow I will finish the RS232 communication and a driver for 5-way navigator switch. Then the Real time clock, eeprom, sensor, and finally the graphical LCD on plan within this week or so.
