You can replace the manual dip stick with one with a ring that floats on the oil. The ring can have magnets in it and you have hall effect sensors on the new dip stick.
Alternately, you can have two parallel plates to form a capacitor. Measure the capacitance which will change with the oil dielectric level.
The capacitor method probably can. The magnetic one will probably not.
