how to design a Gm with good linearity such as -60dB when the input differential signal is about 1vpp ??
 

there are many linearization techniques. you should compare them.
such as source degeneration and other methods.
 

Increase your overdrive voltage of your differential pair (Vgs-Vth).
 

for the input transconductor, what region of operation do you want to be? triode or saturation?

all the open loop linearization techniques are depended on what region of operation your transistors work on. So, to linearlize transistors we need to know this detail, I think.
