It depends on how fast you need. What is your required sample rate? What are you going to use it for? And, if you plan to use an external ADC, what is the required resolution?

They are 10MSPS 10-bit/12-bit/16-bit ADCs.

Hi,
you can also use dsPICs instead of PIC18s which have 12-bit ADCs.
For more speed use ARM CORTEX-M3 chips like STM32F103 or LPC1768.
