Well, how about the CCS web page:

Poke around the web site and they have lots of resources, including example codes. Also, you should have lots of example codes in the install directory... they are fairly well documented and are good examples of how to do things.

You should also have gotten "C Compiler Reference Manual for PCB, PCM, PCH, PCW, and PCWH", when you purchased ccs. They sell this for $15 if you need an extra copy.
