If I am using a MOSFET to interrupt high-current and would like the switch to turn off slowly in order to reduce a voltage spike....what kind of circuit would be required for this?

A negative-going ramp voltage instead of a rectangular one as the gate switching voltage. One possible method would be a large resistor in series with the gate so that the gate charge will not drain too quickly. A steering diode in parallel with the resistor will avoid slow turn-on.
