For which signal we need to do Sheilding....?

In this particular case I would select to shield the voltage more than the current. But, why not shield them both?

Also, from the naming convention they seem to be static signals and you should therefore shield them at places where they cross HF wires or other AC wires/nodes. As such, due to their static nature, you do not have to consider any impedance matching (i.e., full ground shield).
