DPCM or ADC in PIC , which is better for voice recording?

I want to make a digital voice recorder using MMC & PIC. For that, is it better to use adc in pic (i may use only 8 bit) to sample the the audio from a mic(after proper pre amplification)?(i think ADC require some time to complete each cycle, and will this affect the the audio quality?
My next choice,
What i am thinking is at first i modulate preamp output signal to DPCM and i stream it to PIC and pic will store it to MMC instantly. If the DPCM stream is stored in MMC then i think it will be very easy to decode it using a low pass filter.
So which is better? (Storing ADC samples in MMC or DPCM stream in MMC)

my maximum SPI clock is 5MHz.
