Can someone explain to me why there are two 33pF caps on my oscillator (SEE DIAGRAM)

Where is your diagram?
Nearly all crystal oscillators have two low-value capacitors.

Go to the website of a crystal manufacturer. They show the same type of circuit and might explain why the two capacitors are needed.
 

need for capacitor to crystal oscillator

Crystal needs loading capacitors to work at the exact operating frequency. Values will be determined by the crystal manufacturer.

It is employed for filter the noise and it will impact the frequecny of crystal.
