for Flash
1MB = 29LV800 fujitsu , amd , intel
2Mb = 29LV160

for Eeprom
24LCXX -> Serial
93LCXX -> 3Wire eeprom
Parallel eeprom dunno
 

i think depending for which kind of microcontrollorer you must use.
Actually all flash manifacturer have lead times very long.

Try AT45DB family from Atmel. Dataflash with SPI interface, fast and high capacity.
