Monitoring process activity on my PC

Hi all,

I am looking for an application that can monitor and record a process activity on my PC along time.
for example: If I activated "process1.exe" two times in one week for 10 minutes then i'd like to see a recorded plot or a text file with that information.

I have Process Explorer but I don't think I can record anything with it.

I'll be happy to hear your thoughts.
