Re: capacitors
Most of the large cap use Electrolytic which has a good low frequecy filtering capability and the Ceramic cap will be used to remove the high frequency.
One simplest way to do that is
1. Buy 5 power header which is fit for you instrument.
2. Cut the output of the adaptor
3. Soldering all this 5 header with the adaptor output (be careful of the polarity)
4. use the plastic tape to protect the soldering joints
5. Then you can use it.
Before you...
It depends on your requirement.
If you need a low noise converter, LDO is good.
If efficient or heat generate is important, DC/DC is good.
If just need a voltage conversion, just us resistors.

is the resistance in a human skin body low?
There are some different between the Human model and the real measurment. When I measure myself, I find the resistance is in M-ohm order (hand to hand).
