You can buy off-the-shelf load cells manufactured by, for example, Honeywell: **broken link removed**
or, cheaper alternative is to get some metal-foil strain gauages ( http://www.omega.com/literature/transactions/volume3/strain.html ) and build a load cell by yourself.
These devices are pretty linear but basic calibration will be required.
