Hi everybody. I want to make a car tracker. An industrial device that can be presented to the market. In stores, most of the modules of Simcom and QuickTel companies are available, such as sim800. I watched a few on YouTube. Apparently, they had not used these modules. Will using the products of the above companies be a good choice or have I chosen the wrong path?

It depends.
A "car tracker" does not describe what data you want to transfer.
One direction, both? to a database(cloud) or to a browser? Or peer to peer? Over-the-air updates of a microcontroller.
How often per day / per second. Packet sizes. peak data tranfer rate..
Which protocols, which mobile phone technology (may depend on countries) ..
Size, current consumption, power saving modes...
Your IDE / compiler / language, available software / libraries ...
