Your PCB fabricator will need the Gerber files for each layer including top and bottom solder mask, the NC drill file, a Drill Drawing that includes any special instructions including your desired stackup, and it's a good idea to include the drill report file (.drr).
Your assembly house will need the top and bottom assembly drawings to show all component designators so they can figure out what component goes where. If you used surface mount components, they may also need a pick-and-place file. For surface mount they will most likely also want the top and bottom paste masks.
Instead of asking a bunch of strangers here what you will need, you would do better to call your fab and assembler. They can tell you exactly what they expect. Every fab and assembly house does things a little differently. The basics stay the same, but the particulars will be different.
