I am trying to see if I can build a kind of weight checker system using load cell on a conveyor, the sensitivity should be measuring up to 1g. I am not sure how some products are able to achieve this. Anyone has any insight into this?

What is maximum weight of the product? I think you should give more details about this task ...
Pack length
Pack weight
Line speed required
Pack content (solid or liquid)
Motor technology
Stabilization time of the weight transducer
Airflow causing readings in error
Vibrations from machinery causing unnecessary rejects
Sensitivity to temperature, as the load cells can be temperature sensitive
