I believe, though have never tried, you can tie two or more channels of the ULN2003 together so increasing the current handling.
You might find the L298 chip, which can handle up to 4 amps, a better option as it has in a proper heatsink tab which will be needed if you are driving the stepper hard.
It also has current sensing which might be of use in your circuit.
As a first step, you should become clear about the necessary drive method for your stepper motor. Higher current stepper motors are often designed for current controlled, bipolar drive and not suited for open collector unipolar drivers like ULN2003.
If unipolar voltage switching is the required drive method, individual transistors, preferably MOSFET are the most simple solution. Why people are only looking for ICs as a solution of any problem?
