I have 2 sensor that have analog output signal(0~5v) I want to connect them to my MCU board. I'm considering Rj45 and cat6 for transmission line. the distance is almost 2 meter.
Is there any data attenuation over Rj45 and does cat6 immune the transmission line from Noice?

RJ45 would be OK for that. Don't bother with CAT6, any twisted pair cable will do for 2m distance.

Cat 6 is not particularly noise immune for single-ended signals. If you are concerned about noise pickup then you should use coaxial (audio cable) or shielded-twisted-pair wires.
