Has lots of applications like in Medical Imaging, Security issues like Video Surveillance, Transmission of video over mobile phones using video compression techniques, and so on.
Books for these topics can be found on Edaboard using Search.

Friend, generally, Machine Vision and Visual Information Processing are the most active field for image and video processing research.

you might want to look at the applications of image segmentation, texture analysis and synthesis, video retrieval, motion segmentation, et al.
