suitable CPU for prototyping real time security system

I've to design a security system that make use of 4 to 5 cameras. Please recommend me the most suited board for my application among RPi/ Intel Galileo/ Intel Edison and if any other?
My task is

1) combine images of beneath of a car and combine these images in a single image (image stitching).
2) Show stitched output on an LCD
3) car number plate recognition.
4) actuation of a dc motor if things goes fine.

I'm confused, either or not these things can be done on board in real time with an acceptable delay?
Help out.!

you don't say it is video or stills
nor if it color or B/W
nor resolution

BUT if you need to do 1) and especially 3) as well you definitely can NOT use a wee micro-controller, you need a full-blown PC.
 

the image would be color with a low resolution, more or less 400*300.
