what are the correspondences to A, B and C (to 1, 2 and 3)?

C is center (the terminal connected to the slider), the assignment of A and B is arbitrary, unless c.w. and c.c.w. is marked in the schematic symbol or an arrow indicates clockwise rotation.

I would usually associate clockwise rotation with up direction in the schematic (A = right) but there's no clear rule.

So, assuming that 2 is C and B is 1, following the schematic, I should connect 1 and 2 together?

Yes. Clockwise rotation will decrease th resistance in this configuration.
