hi all
can some one provide me with a useful documentation about designing a processor using verilog hdl?

You could check picoblaze/microblaze from xilinx, or nios2 from altera. Also on opencores.org there's some processors you could take a look at. As inspiration for your design I mean.
 

I haven't read it, but I've heard of this book that sounds like just the sort of thing you'd be after:
