i think audio (music) and speech coding very use different algorithm
because place 2 link (open source):

basic info of speech-coding algoritms (used for coding - the model of speech signal )you can in www at folowing keywords: LPC (base of almost all speech algo), CELP, VSELP, ect..

and a article (for general-audio coding):
