Can anyone give me the design of an example circuit that would interface a strain sensor to an ADC? Let's assume that the ADC has an unipolar inpout range of 0 - 5 volts and a dynamic range of 60 dB (10 bit resolution)

Could you please include shots of the circuit configuration, the analogue circuit used to measure and modify the signal including the design operation and calculations

Strain sensors are often called strain gauges. If you google strain gauge amplifier circuit, you'll get application notes and other useful info.

Usually, signal condition for strain gauges is done with an instrumentation amplifier (InAmp). The output of the InAmp can be fed into the A/D.
