Some manufactores allow use proprietary AT commands to get some information available on display . As example Ericsson R520.
These commands are not defined in ETSI or 3GPP standard for mdoem AT commands , those are up to manufactor .Check AT command manuals for those .
But if you would like to hack LCD-controller connection ????
May be you can read data which transfered to LCD GSM.
After that yiu can convert it data to microcontroller and than you can display it again in LCD controller or LCD ROM character generator
