How to plot the Phase of S21 vs frequency for LHM

Hi all,
I couldn't understand how to plot the phase of S21 vs frequency for left handed materials? Can any help me in this regard? I have read the book "Electromagnetic Metamaterials" but could't get the concept used. I am unable to know when to start from positive level and when to start the curve from negative level.
