how to know which bsim model has been used by cadence

The LEVEL parameter (in the model file) determines this.

how to access this model file in cadence environment

What do you mean by "cadence" ?
If you use Cadence Spectre, see simulation log file, e.g. "spectre.out".
You can find "Circuit Inventory", there you can see used device model counts.

What is this??
There is no tool which name is Cadence.
Even if you use Cadence ADE, you can launch many vendor's simulators, e.g. hspice, eldo, GoldenGate, .etc.

Always describe correct tool's name and vendor's name which you use as tool or simulator.

You can find out "Circuit Inventory" in log file of any vendor's simulator.
