how gsm modem understand normal message?

when we send msg from our mobile we type in normal language.how this is processed by gsm modem?how at commands are generated ?does gsm modem convert itself?
 

Basically GSM Modem itself does not convert the message, it is the Software within MCU attached with GSM or Software within mobile that converts the text into specified AT Command and sends or receives messages accordingly.
