How do you denote on the gerbers that a particular via is to be plugged and plated?

Some of the vias on our PCB are thermal vias, and they are to be plated over with copper, and plugged with epoxy.
However, other vias on the same PCB are "normal" vias, and are not to be plated over, and not to be plugged.
How do we denote this to the PCB manufacturer? The information doesn’t appear on the gerbers.

No. There are different methods to mark vias that should be plugged or plugged and plated over. Most popular is using unique drill codes, another option is having an additional layer marking the vias to be plugged.

You'll use specific padstacks to get the information generated.

In any case, the chosen marking has to be agreed with the manufacturer before and clearly explained in the order and accompanying documents, additionally in can be printed as text on drawing layers in the Gerbers, e.g. a drill drawing that's still used in many PCB designs.
