The usual method is to pulse width modulate the voltage to the motor.

ST/Shingdengen/allego have such control chip,you can use such schip to control IGBT ,then to control DC motor.
The basic theory of small or Large DC motor is same.

For simple application, you can use the following ICs:

Texas Instrument offers TMS2000 series DSP controllers that are optimized for motion control application. For higher end application of BLDC motor, you can consider to use this controller. There are many design examples/codes available at TI website.

u can use pulse width modulation using 555 and drive the motor using a relay

some microcontrollers can drive PWM signals if i'm not mistaken.

It's bad idea. Coz when you are switching motor the Relay will BURN !!!. Maybe you should read some Laws - The Ohm first :)
