I am planning to create a water level sensor which should have a resolution of 1mm or atleast .5cm. Please suggest me the suitable sensor. The water level should be recorded daily and at the end of the month or when the PC is connected to the device the readings should be transferred to the PC.
Please suggest me the required accessories..

if you do a web search for ground water level sensors it will give you many links, e.g.
**broken link removed**

you can take readings and store them into an FRAM then once a month connect a PC via RS232 or USB to read the data.
How often you sample and store data with determine the size of FRAM
