What FPGA/PLD are being used in Airplanes?. Any would recommend any model/vendor.

You can use any supplier or part that will meet your needs. If your question is related to safety issues the choice of FPGA does cause you to meet your safety requirements. You will meet your safety requirements by designing your product to include specific safety features and components as specified by the governing agency for your product line.
