Does anyone have any good links or appnotes to fully explain opamp parameters, mainly noise, but all others, offset, cmmr etc
I really need to know what to specify for a high performance opamp.

try the web sites for suppliers

The major op amp comanies have ap notes on their web sites. Particularly good are TI, Burr-Brown,and Analog Devices
 

that is right,ti and analog.op from linear is also very good:
