Data capture efficiency question

I'm designing a little data logger to capture accelerometer data from rotating machinery.

The object is to write the data to a high speed serial eeprom, after (or during) each A/D capture, for subsequent analysis after adequate data samples have been acquired.

The CPU is a DsPIC30F6012 (12-bit A/D), the serial eeprom is a Ramtron FM24C512, sample rate can be anywhere between 5Khz - 40Khz.

Can anyone on the forum advise as to an efficient strategy for the acquire/acqisition/store process?
