Can anyone provide simplest circuits for IR sensor using IC741 ,Alcohol sensor and Vibrational sensor(Piezo electric sensor)???

Some typical ways to use a signal from a sensor.



Frequently you include it as part of a voltage divider.

The transistor might be an NPN or PNP or you can use an op amp.

The rightmost example shows a comparator arrangement using an op amp.

You may need to experiment with placement of components, depending on whether you want output to rise as sensor resistance goes up, or as it goes down instead. Etc.
