I am planning to use the LF356N for a gain multiplier and sign inverter application , but i don't know if the opamp can handle it well like the 741 , because this one is a J-fet based opamp , just want to know your opinions .
Of course it will. Just about every op-amp will work better than a 741! Even the LF356 is considered a very old device now though. It must be ~30 years since first being released.
Because the resistor values are so low, the circuit has an input resistance of only 1k ohms (the value of R1), which is a waste of the extremely high input resistance of the Jfets on its inputs of the opamp.
You can use 100k for R1 and 200k for R2 or even use 1M for R1 and 2M for R2 and the voltage gain will still be only 2 times.
