Based on the reviews I'd say the How Video Works book is more of an overview of video and not as much of a technical reference for a digital engineer designing a video subsystem. It's even mentioned in the book summary "This book is a must-have for any broadcast or video production department. It is also perfect for the new video technician or non-tech creative professional who is just beginning to discover the digital world.", that looks more like for TV broadcasters and people who work on using using video production equipment. I certainly doesn't seem like it's for someone who is going to design an add insertion multiplexer.
