One more example below - in this pic, the one on the left side has nothing connecting to the points other than the one wire.
What would be the purpose of this connection / terminal?

Not sure what the schematic is from - I just wanted to start looking at schematics to practice identifying components so I did a quick search online and found a few pics to look over.
So in this case I would imagine then that when the foot switch is pressed it would connect the purple and white wires and complete the circuit?
They are all 3-pin terminal connectors. However, the last one has a fuse-inline located on the connector. You can physically disconnect/remove the fuse. Hope this help. Check Wago connectors for varieties.
