Use a good operational amplifier. Instrumentation amplifiers are the easiest to operate at ~1000x gain. Find the frequency response of your sensor and adjust amplifier response to match it. Locate the amplifier as close to sensor, and use a battery or a good DC power supply for it. Make sure your design is itself not affected by 500g acceleration.
