What is the big diffbetween 8bit uC, 16bit, 32bit, 64bit?

Me and my friends have been talking about this a lot lately.. with win xp64 coming out and the new OS X64 coming out.

What is the actuall difference?

From what I know about progamming, I know you can declare variables in different ways, and this can save space in ram.

I know the more bits you have, the more access to ram you can have.. but that is about all I know.

Does bits actually equate to speed directly? or is it just because you can declare variables in diff ways?

Normally it's referring to the width of data buses. For example 8-bit processor has 8-bit data bus...
