You can do a brute force search with a voltage source and series current limiting resistor. Try all combination of pairs of pins and record which pairs produce which segment illumination.
You can do some labor reduction by looking up the pinouts of common display types and try them first.
There are two types of 7seg -> Common cathode or common annode.
I never remember which one is which, but at the botton line, in one of them u have common ground and to lit the segment u have to apply a positive voltage. On the other type u have common VCC and to lit the segment you have to ground the pin.
Usually the middle ones (upper side and/or lower side) are VCC or GND.
U have to test it by brute force.
Use a multimeter on the diode test position to check it.
For example:
Put the black probe on the uper middle and touch others pins with the red probe. If everything is ok it will light up. If it don´t change the probes position. If it still doesn't work you are taking the wrong pin as ground or vcc.
